With just a few a ingredients you too can have beef enchilada just like your favorite restaurants that your whole family will enjoy. This has about a 15 minute prep time and a 18 minute cook time.
INGREDIENTS:
- 1 lb. ground beef
- 1 10 oz. diced tomatoes with green chilies
- 1 15 oz. enchilada sauce
- 2 cups of shredded mexican blend cheese
- flour tortillas
DIRECTIONS:
- Brown ground beef and drain, place back into your skittle. Add tomatoes with chillies along with half of the enchilada sauce with ground beef, heat through to let flavors blend.
- Fill tortillas with a pinch of cheese and a scoop of mixture, roll and place in greased backing dish.
- Pore remaining enchilada sauce over rolled tortillas and top with reaming cheese.
- Bake in a 350-degree preheated oven for 18 minutes or until cheese is melted.
NOTES:
You can make this as spicy as you like, with the type of chilies or sauce you buy. Also you can add jalapenos, lettuce, sour cream, and green onions are a few of our favorites.
