Chicken Florentine Casserole

Easy Chicken Florentine

  • 1 tsp oil
  • 2 lbs boneless chicken breast
  • 1 clove garlic
  • 1 tub Philadelphia Italian Cheese & Herb Cooking Creme
  • 3/4 milk
  • 4 cups of cook bow-tie pasta
  • 1 pkg frozen chopped spinach, thawed, drained
  • 1 cup shredded mozzarella cheese
  • crumbled cooked bacon

  • Preheat oven to 375 degrees
  • In large skillet cook chicken in oil with garlic
  • After chicken is cooked add remaining ingredients except bacon and mix.
  • Place in 1 1/2 qt casserole (Sprayed dish with cooking spray) cover and bake 15 minutes
  • Remove from oven top with bacon and with return to over uncovered for another 10 minutes.

This goes great with garlic bread!!!!! I have also added some artichoke hearts chopped.




Slow-Cooker Beef Stroganoff

Tender Meat - Easy to Make - SOOO Satisfying

  • 2 lb Beef Stew Meat (Cube)
  • 10 oz Fresh Mushrooms (Sliced)
  • 1/4 Cup Onion Chopped
  • 1 Clove Garlic
  • 1 Cup of Beef Broth
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1 Cup Sour Cream
  • 2 Tbsp Flour
  • 1 Tbsp Dijon Mustard
  • 1 Pkg (16oz) Egg Noodles
  • 2 Tbsp Chopped Fresh Parsley


  • Place meat, mushroom, onion, salt, broth, paprika and salt in crock pot cook on low for 7-8 hours.
  • After the meat has cooked 7-8 hours, mix sour cream flour and mustard into the mixture for another 15 minutes.
  • Cook noodles according to directions and place in large serving bowl.
  • Plate noodles, add mixture, and top with parsley.

This is goes perfect with salad and cheese bread. ENJOY...

Fish Tacos

Easy Ranch Fish Tacos

INGREDIENTS:
  • Tortillas
  • 1 lb White Fish Fillets
  • 1/2 Cup of Cucumber Ranch Dressing
  • 2 1/2 Cups of Bagged Coleslaw Blend (mix)
  • Tomatoes
  • Red Onion

DIRECTIONS:
  • Use fork to break up cooked fish and add 1/4 of dressing and mix
  • Use remaining dressing on slaw and mix
  • Fill shells and garnish with Tomatoes and Onion.
This is so easy and we like to fry our shells in oil. YUMMY!

Spinach Stuff Chicken

Everything Taste Great With Bacon


INGREDIENTS:
  • 1/2 Cup Mayonnaise
  • 1 (10oz) Package of Frozen Chopped Spinach (Thawed and Drained)
  • 1/2 Cup Crumbled Feta Cheese
  • 2 Cloves of Garlic
  • 4 Skinless, Boneless Chicken Breast
  • 4 Slices of Bacon

DIRECTIONS:
  • Preheat oven to 375 degrees.
  • Mix mayonnaise, spinach, cheese and garlic, set aside.
  • Butterfly breast and spoon mixture into breast.
  • Wrap with bacon and secure with toothpick
  • Bake in sallow baking dish for 1 hour.

Roasted Jalapeno Soup

Most Amazing Flavors.


Ingredients
  • 4 green jalapeno peppers
  • 1/2 cup carrots, diced
  • 1/4 cup white onion, diced
  • 1 teaspoon of minced garlic
  • 2 tbsp olive oil
  • 3 Tbsp butter, softened
  • 1/4 cup flour
  • 2 1/2 cups chicken stock
  • 1/2 cup heavy whipping cream
  • Salt and pepper
  • 1/2 cup tomatoes, chopped and peeled
  • 1/4 cup mushrooms, sliced
Instructions
  1. Preheat oven to 400F. Line a cookie sheet with foil. Cut each jalapeno in half lengthwise and remove the seeds and membrane. Place them face down onto the cookie sheet. Roast for 10-15 minutes or until slightly darkened. When cool enough to handle, chop.
  2. In a medium sauce pot, heat the olive oil. When hot, saute the carrots, onion, and garlic for about 5 minutes or until the carrots and onions start to soften.
  3. Add in the butter. Once the butter has melted, stir in the flour until everything is coated. Stir in the chopped jalapenos. Slowly stir in the chicken stock and bring to a boil. Then  simmer for 7-10 minutes until the soup and thickened. If you feel that your soup isn’t thick enough, add more flour.
  4. When the soup has thickened, turn off the heat. If using an immersion blender, blend the soup directly in the pan. If using a regular blender, then puree until smooth.*  Pour back into the sauce pan.
  5. Stir in the heavy cream, tomatoes and mushrooms on low heat for 5-7 minutes to heat and blend the flavors.
Notes
*Hot soups expand much greater in a blender than cold soups. Use extra caution and do not overfill the blender. Pulse a few times before turning the setting on low.

Bubble Pizza


The best thing about this quick meal is you can personalize it.


INGREDIENTS:
  • 1  Jar Spaghetti Sauce
  • 2 Cans Biscuits
  • 2 Packages of Pizza Cheese
  • Pepperoni Slices, or your favorite pizza topping like hamburger or sausage, cooked & drained
DIRECTIONS:
  • In a large bowl quarter biscuits into pieces add sauce, toppings and one package of cheese.
  • Mix together
  • Place into a 9 x 13 greased pan, bake 350 degrees for 25 minutes.
  • Remove from oven and add the second package of cheese, and bake another 7-10 minutes.
Note: I like to save a little of the pizza topping to but on with the second package of cheese.

Mouth Watering Meatloaf

Upside Down Meatloaf

Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 onion soup mix
  • 3/4 cup finely crushed saltine cracker crumbs

Directions

  • Preheat oven to 350 degrees. Lightly grease a 5x9 inch loaf pan.
  • Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  • In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
  • Bake for about one hour.
