Chocolate Strawberry Shortcake

Refreshing goodness that is totally sinful.


INGREDIENTS:
  • Brownie Mix
  • Cool Whip
  • Fresh Strawberries
  • Chocolate Syrup

DIRECTIONS:
  1. Mix brownie mix according to box. Spilt batter into 2 8 inch cake pans and bake according to directions on box.
  2. Cool and place one brownie on cake plate. spread half of cool whip and add sliced strawberries. Place second brownie on top, and add the rest of the cool whip and strawberries.
  3. Drizzle chocolate syrup on top for design.

Peanut Butter Cookies


Great recipe that makes a small batch of cookies. I usually get 18 average size treats. My 13 year daughter made these the other night, and they turned out yummy.

INGREDIENTS:
  • 1/2 cup soft shortening
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

DIRECTIONS:
  1. Preheat oven to 350 degrees and lightly grease your cookie sheet
  2. Mix shortening, peanut butter, egg and sugars
  3. Blend in the vanilla, salt and soda
  4. Roll dough into a ball about the size of ping pong and space on cookie sheet
  5. Dip fork into flour and make crisscross marks, gently flattening the ball of dough
  6. Bake for 8-10 minutes or until done

Pizza Boats

Kids loves this, and oh so easy!!!

INGREDIENTS:
  • Italian Bread
  • Pizza Sauce
  • Cheese
  • Pizza Toppings

DIRECTIONS:
  1. Preheat oven to 400 degrees
  2. Place bread on cookie sheet, spread sauce, add cheese and your favorite pizza toppings
  3. Bake 12-15 minutes or till cheese is melted.

NOTES:

You can use any type of bread, even left over hot dog buns work great. Another yummy idea is using alfredo sauce, grilled chicken with bacon bits.

Fresh Veggie Mac Salad

This recipe takes me back to my childhood. My father had a big garden, and mom would make this recipe using the produce from the garden. Made this yesterday to take on a picnic, a wonderful fresh side that goes well with most dishes.

INGREDIENTS:
  • 2 cups elbow macaroni
  • 1/4 teaspoon salt
  • 1.4 teaspoon pepper
  • 1 tablespoon granulated sugar
  • 1/8 cup french dressing
  • 1/2 cup miracle whip
  • 1/4 cup onion diced
  • 1 roma tomato diced
  • 3 cups of cucumbers diced
  • 1 cup of peppers ( I like to use yellow or orange for color)
DIRECTIONS:
  1. Boil and drain macaroni. Rinse with cool water.
  2. Mix in remaining ingredients, Cover and refrigerate for at least one hour for flavors to blend.

Baked Beef Enchilada


With just a few a ingredients you too can have beef enchilada just like your favorite restaurants that your whole family will enjoy. This has about a 15 minute prep time and a 18 minute cook time.

INGREDIENTS:
  • 1 lb. ground beef
  • 1 10 oz. diced tomatoes with green chilies
  • 1 15 oz. enchilada sauce
  • 2 cups of shredded mexican blend cheese
  • flour tortillas

DIRECTIONS:
  1. Brown ground beef and drain, place back into your skittle. Add tomatoes with chillies along with half of the enchilada sauce with ground beef, heat through to let flavors blend.
  2. Fill tortillas with a pinch of cheese and a scoop of mixture, roll and place in greased backing dish.
  3. Pore remaining enchilada sauce over rolled tortillas and top with reaming cheese.
  4. Bake in a 350-degree preheated oven for 18 minutes or until cheese is melted.
NOTES:
You can make this as spicy as you like, with the type of chilies or sauce you buy. Also you can add jalapenos, lettuce, sour cream, and green onions are a few of our favorites.
