Roasted Jalapeno Soup

Most Amazing Flavors.


Ingredients
  • 4 green jalapeno peppers
  • 1/2 cup carrots, diced
  • 1/4 cup white onion, diced
  • 1 teaspoon of minced garlic
  • 2 tbsp olive oil
  • 3 Tbsp butter, softened
  • 1/4 cup flour
  • 2 1/2 cups chicken stock
  • 1/2 cup heavy whipping cream
  • Salt and pepper
  • 1/2 cup tomatoes, chopped and peeled
  • 1/4 cup mushrooms, sliced
Instructions
  1. Preheat oven to 400F. Line a cookie sheet with foil. Cut each jalapeno in half lengthwise and remove the seeds and membrane. Place them face down onto the cookie sheet. Roast for 10-15 minutes or until slightly darkened. When cool enough to handle, chop.
  2. In a medium sauce pot, heat the olive oil. When hot, saute the carrots, onion, and garlic for about 5 minutes or until the carrots and onions start to soften.
  3. Add in the butter. Once the butter has melted, stir in the flour until everything is coated. Stir in the chopped jalapenos. Slowly stir in the chicken stock and bring to a boil. Then  simmer for 7-10 minutes until the soup and thickened. If you feel that your soup isn’t thick enough, add more flour.
  4. When the soup has thickened, turn off the heat. If using an immersion blender, blend the soup directly in the pan. If using a regular blender, then puree until smooth.*  Pour back into the sauce pan.
  5. Stir in the heavy cream, tomatoes and mushrooms on low heat for 5-7 minutes to heat and blend the flavors.
Notes
*Hot soups expand much greater in a blender than cold soups. Use extra caution and do not overfill the blender. Pulse a few times before turning the setting on low.

Bubble Pizza


The best thing about this quick meal is you can personalize it.


INGREDIENTS:
  • 1  Jar Spaghetti Sauce
  • 2 Cans Biscuits
  • 2 Packages of Pizza Cheese
  • Pepperoni Slices, or your favorite pizza topping like hamburger or sausage, cooked & drained
DIRECTIONS:
  • In a large bowl quarter biscuits into pieces add sauce, toppings and one package of cheese.
  • Mix together
  • Place into a 9 x 13 greased pan, bake 350 degrees for 25 minutes.
  • Remove from oven and add the second package of cheese, and bake another 7-10 minutes.
Note: I like to save a little of the pizza topping to but on with the second package of cheese.

Mouth Watering Meatloaf

Upside Down Meatloaf

Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 3/4 cup milk
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 onion soup mix
  • 3/4 cup finely crushed saltine cracker crumbs

Directions

  • Preheat oven to 350 degrees. Lightly grease a 5x9 inch loaf pan.
  • Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
  • In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
  • Bake for about one hour.

Crock Pot Vegetable Beef Soup

Super Easy

INGREDIENTS:
  • Beef Stew Meat
  • Can of Sliced Potatoes
  • Can of Sliced Carrots
  • Large Can of Crushed Tomatoes (or 2 average size cans)
  • Bag of Shredded Cabbage
  • 1/8 Cup of Sugar
  • 2 Cups of Water
  • Green Onion
  • Salt and Pepper
Place all ingredients in crock pot and cook for at least 8 hours. I do use fresh vegetable instead of can, when I have time to slice everything up.

Runza Casserole

This is one of my families favorite, It reminds us of NEBRASKA every time I make this.

INGREDIENTS:
  • 1 Can of Pizza Crust Dough
  • 1  Pounds of Hamburger
  • 2 Cups of Cabbage (I cheat and use already shredded cabbage in a bag)
  • 1/2  Cup of Onion
  • 1 Can of Cream of Mushroom Soup
  • 1 Teaspoon of Garlic Salt
  • Optional: Swiss Cheese and Mushroom


DIRECTIONS:

  • Preheat oven to 350 degrees
  • Brown meat in large skillet, drain and return to skillet.
  • Add cabbage, onion, garlic salt (Mushrooms if you decide to add to casserole) and cover with lid.
  • Once cabbage is soften, stir in soup and simmer for couple minutes.
  • Grease baking dish and roll out pizza dough. cut in half and place in dish.
  • Add hamburger/cabbage mixture. (Top with cheese if you decide to use in casserole)
  • Place then other half of dough on top and bake for 25 minutes or until brown.

Bacon Cheese Foil Potatoes

Easy Clean Up

INGREDIENTS:
  • Potatoes
  • Bacon Bits
  • Shredded Cheddar
  • Butter
  • Foil
  • Salt and Pepper
DIRECTIONS:

  • Use a 12X12 square of foil to make a single serving . and grease bottom
  • Layer potatoes, bacon bits, cheese, and a pat of butter
  • Salt and Pepper for taste
  • Bring corners up to make a foil pocket
  • Bake 350 degree for about 45 minutes
I like this because it makes a little or a lot. Since they are individual serving you can add green pepper and onion. I have also made this out camping on an open fire and on the grill.

Apple Crunch


An easy apple crisp served warm with a scoop of Ice Cream.
Perfect for this fall season.


Combine and pour into an oiled 9X9 baking dish
  • 3 Cups of Apples ( Pared and Sliced)
  • 1/2 Cup Sugar
  • 1 Tablespoon Flour
  • 1/2 Teaspoon Salt
  • Pinch of Cinnamon
Topping, combine and crumble together. Sprinkle over apples. Bake 350 degrees for 40 minutes
  • 3/4 Cup Oatmeal
  • 3/4 Cup Flour
  • 3/4 Cup Brown Sugar
  • 1/4 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/3 Cup Melted Butter

Southwest Chicken Buritto

This combination I put together tody after a trip to the grocery store, that turned out fabulous. I noticed a couple items I have never seen before from Pace. Garlic & Lime Verde Salsa and Jalapeno & Pepper Cheese Sauce.

INGREDIENTS:
3 Boneless Chicken Breast (cubed)
1 Package of Frozen Santa Fe Medley Vegetables
1 Jar of Garlic & Lime Verde Salsa
1 Jar of Jalapeno & Pepper Cheese Sauce
Tortillas

DIRECTIONS:
Preheat oven to 350 degrees. Place frozen vegetables in a 2 quart casserole dish, then add cube chicken, lightly salt. Pour half of the jar of Verde Salsa on top. Cover with lid and cook for one hour. With slotted spoon, put cooked chicken combination into a tortilla and fold into a burrito, and spoon cheese sauce on top.

IT WAS AMAZING. This turned out packed full of flavor. I love creating recipes with just a few ingredients. My twins added shredded cheddar to the inside and my husband added hot sauce and sour cream. Hope you enjoyed this EASY recipe.

Pita Pizza

Healthy Favorite

This has to be one of my all time favorite things for my family to eat. They are eating healthy and don't even know it.  As far as the ingredients go, all you need to start with a pita bread. I like the whole wheat, but have tried many different types including onion pita bread.

Next the sauces can be anything from pizza sauce, ranch dressing, or alfredo sauce.

Just about anything can be used for your pizza toppings. Here is a list of some idea's.
  • Chicken
  • Pepperoni
  • Bacon
  • Ham
  • Green, Yellow, Red Peppers
  • Onions
  • Tomato's
  • Pickled Sweet Peppers
  • Cheese of any kind
Bake for 12 minutes at 400 degrees

Easy Ranch Cheese Ball

The blend of Sharp Cheddar and Ranch is WONDERFUL!

INGREDIENTS:
  • 2 Packages of Cream Chesse
  • 1 Packet of Ranch Dressing Mix
  • 2 Cups of Sharp Cheddar
  • Almond Shavings
DIRECTIONS:
  • Mix soften cream cheese, ranch mix, and cheese together. I use my hands.
  • Once mixed form into ball.
  • Roll ball into nuts. Walnuts work well also.
  • Place in fridge to let flavors blend for at least an hour.
  • Serve with your favorte crackers.

Baby Poop Dip

Don't Let the Name Fool you. Great Hot Dip Recipe.

INGREDIENTS:
  • 1 Pound of Hamburger
  • 8oz. of Your Favorite Salsa
  • 16oz of Processed Cheese
  • Dash of Worcestershire Sauce
  • Corn Chips
  • Optional Jalapenos, Peppers or Onion
DIRECTIONS:
  • Brown the hamburger
  • Add brown hamburger, cheese, salsa, and other optional items to crock pot
  • Once melted serve over chips

Asian Salad

Mouth Full of Flavor

INGREDIENTS:
  • 1 Package of Broccoli Coleslaw Mix
  • 1 Package of Beef Ramen Noodles
  • 1 Cup of Sunflower Seeds
  • 1/2 Cup Sugar
  • 1/4 Cup of Vegetable Oil
  • 1/3 Cup Cider Vinegar
DIRECTIONS:
  • Place Coleslaw Mix in Bowl.
  • Crush Ramen Noodles, Set Seasoning Package to Side, and add Crushed Noodles to Mix.
  • Add Sunflower Seeds to Mix.
  • Add Sugar, Oil, Vinegar with Seasoning Package to a smaller bowl and mix well then blend with Mix
  • Stir everything together and place in Fridge for a couple hours prior to serving to let flavors blend.


Baked Jalapeno Poppers

Love It Hot Hot Hot
INGREDIENTS:
  • 1 Container of Whipped Cream Cheese
  • 12 Fresh Jalapenos Sliced Lengthwise
  • 12 Slices of Bacon Cut in Half
  • Garlic Salt (Dash)
  • Green Onion
  • Shredded Sharp Cheddar
DIRECTIONS:

  • Mix cream cheese with garlic salt, and green onion
  • Fill mixture into jalapenos top with Cheddar cheese
  • Wrap bacon around jalapeno and place on baking sheet
  • Bake at 450 degrees for about 20 minutes or until bacon is brown.
This is a favorite snack for my family to have while watching the Nebraska Cornhuskers on TV. Go Big Red

Grilled Fruit Kebabs




Sweet & Fresh

INGREDIENTS:
  • 1/2 Cup Margarine
  • 1/4 Cup Honey
  • Fresh Fruit
  • Wooden Skewer's
DIRECTIONS:
  • Soak wooden skewers in water for 15 minutes while you prepare your fruit into cubes
  • Melt margarine and honey in small bowl
  • Place fruit onto skewer and lay on a sheet of foil
  • Place foil on medium heat grill and baste with mixture and cook for 5 minutes,then flip.
  • Baste and grill for another 5 minutes or until soften.
We like to use banana, pineapple, strawberries, peaches, and kiwi, but you can use any fruit

INGREDIENTS:
  • Ground Beef
  • Ketchup
  • Brown Sugar
  • Buns
DIRECTIONS:
  • Brown a pound of hamburger, drain grease, return to skillet.
  • Add 1/2 cup of ketchup
  • Add 1/8 cup of brown sugar
  • Mix together and heat through
You can add more or less ketchup or sugar to likeness. We also like to add pickles and a slice of american cheese. YUMMY....

Broccoli Salad

Cool and Refreshing Summer Salad

INGREDIENTS:
  • 1 head of broccoli, chopped
  • 1 medium red onion, chopped
  • 1/2 cup raisins
  • Bacon Bits
  • 1 cup mayonnaise
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons sugar
  • 1/4 cup of sunflower seeds

  • Mix the ingredients together and chill. Goes great with a meal or just by itself.

    Grilled Pepper Steak Fajitas


    Fast and easy clean up. 

    Make camping or at home.

     

    INGREDIENTS:
    • Heavy Duty Aluminum Foil
    • 1 1/2  Pound of Boneless Sirloin Steak
    • 1 Yellow, Red & Green Pepper
    • 1 Small Onion
    • 1 Can Black Beans
    • 1/2 Cup of Fajita Marinade
    • Tortilla Shell

    DIRECTIONS:
    1. Preheat grill to medium-high. Cut steak lengthwise into thin strips, and soak meat in the marinade.
    2. Cut peppers and onion into lengthwise strips. Drain and rinse beans.
    3. Make a foil packet and fill with meat, peppers, onions and beans. This makes enough for about 3 packets depending on the size of packet you build.
    4. Place on grill for about 20 minutes.

    We like to use some of our favorite toppings with this, such as sour cream and cheese. To get an extra boost of flavor squeeze a lime on top. Also you can use frozen pepper and onion mixture instead of fresh.

    Chocolate Strawberry Shortcake

    Refreshing goodness that is totally sinful.


    INGREDIENTS:
    • Brownie Mix
    • Cool Whip
    • Fresh Strawberries
    • Chocolate Syrup

    DIRECTIONS:
    1. Mix brownie mix according to box. Spilt batter into 2 8 inch cake pans and bake according to directions on box.
    2. Cool and place one brownie on cake plate. spread half of cool whip and add sliced strawberries. Place second brownie on top, and add the rest of the cool whip and strawberries.
    3. Drizzle chocolate syrup on top for design.

    Peanut Butter Cookies


    Great recipe that makes a small batch of cookies. I usually get 18 average size treats. My 13 year daughter made these the other night, and they turned out yummy.

    INGREDIENTS:
    • 1/2 cup soft shortening
    • 1/2 cup peanut butter
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 1 egg
    • 1/2 teaspoon vanilla
    • 1 cup flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking soda

    DIRECTIONS:
    1. Preheat oven to 350 degrees and lightly grease your cookie sheet
    2. Mix shortening, peanut butter, egg and sugars
    3. Blend in the vanilla, salt and soda
    4. Roll dough into a ball about the size of ping pong and space on cookie sheet
    5. Dip fork into flour and make crisscross marks, gently flattening the ball of dough
    6. Bake for 8-10 minutes or until done

    Pizza Boats

    Kids loves this, and oh so easy!!!

    INGREDIENTS:
    • Italian Bread
    • Pizza Sauce
    • Cheese
    • Pizza Toppings

    DIRECTIONS:
    1. Preheat oven to 400 degrees
    2. Place bread on cookie sheet, spread sauce, add cheese and your favorite pizza toppings
    3. Bake 12-15 minutes or till cheese is melted.

    NOTES:

    You can use any type of bread, even left over hot dog buns work great. Another yummy idea is using alfredo sauce, grilled chicken with bacon bits.

    Fresh Veggie Mac Salad

    This recipe takes me back to my childhood. My father had a big garden, and mom would make this recipe using the produce from the garden. Made this yesterday to take on a picnic, a wonderful fresh side that goes well with most dishes.

    INGREDIENTS:
    • 2 cups elbow macaroni
    • 1/4 teaspoon salt
    • 1.4 teaspoon pepper
    • 1 tablespoon granulated sugar
    • 1/8 cup french dressing
    • 1/2 cup miracle whip
    • 1/4 cup onion diced
    • 1 roma tomato diced
    • 3 cups of cucumbers diced
    • 1 cup of peppers ( I like to use yellow or orange for color)
    DIRECTIONS:
    1. Boil and drain macaroni. Rinse with cool water.
    2. Mix in remaining ingredients, Cover and refrigerate for at least one hour for flavors to blend.

    Baked Beef Enchilada


    With just a few a ingredients you too can have beef enchilada just like your favorite restaurants that your whole family will enjoy. This has about a 15 minute prep time and a 18 minute cook time.

    INGREDIENTS:
    • 1 lb. ground beef
    • 1 10 oz. diced tomatoes with green chilies
    • 1 15 oz. enchilada sauce
    • 2 cups of shredded mexican blend cheese
    • flour tortillas

    DIRECTIONS:
    1. Brown ground beef and drain, place back into your skittle. Add tomatoes with chillies along with half of the enchilada sauce with ground beef, heat through to let flavors blend.
    2. Fill tortillas with a pinch of cheese and a scoop of mixture, roll and place in greased backing dish.
    3. Pore remaining enchilada sauce over rolled tortillas and top with reaming cheese.
    4. Bake in a 350-degree preheated oven for 18 minutes or until cheese is melted.
    NOTES:
    You can make this as spicy as you like, with the type of chilies or sauce you buy. Also you can add jalapenos, lettuce, sour cream, and green onions are a few of our favorites.

    French Dip Sandwiches

    This is a great recipe you can put together in a slow cooker in the morning, then in the evening you will have a delicious meal ready to serve in minutes.
    INGREDIENTS:
    • 1 boneless beef chuck roast
    • 1 can french onion soup
    • 1 can beef consomme
    • french or italian rolls

    DIRECTIONS:
    1. Place roast in slow cooker, pour condensed soup and consomme over roast. Cover and cook on low for 6-8 hours, or till meat is tender.
    2. Remove roast and shred with fork. Serve on roll.
    3. Skim juices from slow cooker and serve as dipping sauce.
    NOTE:

        We like to use cheese, such as swiss on our sandwiches and sometimes add sauteed mushrooms.
